Another fine recipe to tempt you with

I baked today. I had hopes that some could have been left over for gifts.
NOT.
Ever hear of Lemon Chip Cookies?
I didn't until I got this great cookbook as a gift. Everything in it comes out fastasmagorically wonderful!!

2 cups all purpose flour
1/2 teaspoon baking soda
1 teaspoon ground coriander
1 & 1/2 sticks salted butter (3/4 cup), softened
1 cup granulated sugar
2 Large eggs
1 & 1/2 teaspoon lemon extract
9 ounces mini chocolate chips (about 1 1/2 cups)

Just an aside..I only used 1 cup of chips. and I didn't have ground coriander, I had whole seeds, so I just pounded the seeds with my mortar and pestle and it worked fine.

Preheat over to 300 degrees F.

In a medium bowl combine flour, baking soda and coriander with a wire whisk. Set aside.

In a large bowl cream butter and sugar with an electric mixer at medium speed to form a grainy paste.

Add eggs and lemon extract and beat well.Scrape down sides of bowl.

Add the flour mixture and the chocolate chips and blend at low speed just until combined. Do not overmix.

Drop dough by teaspoons onto ungreased cookie sheets, 1 1/2 inches apart.
Bake for 14-15 minutes. Do Not Brown.
Immediately transfer cookies with a spatula to a cool flat surface.

Yield: about 4 dozen.

And wouldn't you know. All the cookies are GONE! EATEN in one day!!! Between my little ones' K class party and afterschool and after supper snacks. There's none left. I guess that means they're good. :-)

These sound delicious. My Italian friend made stuffed cookies - it's a secret recipe handed down to her from her mother (AFTER her mother died!). They are so delicious. We had them with this Italian liquer called Limon or something (30 proof), and hot tea. I poured some of the lemon liquer in my tea, and OHHHH was it good!

BTW, I emailed your jokes including the talking chicken one to several friends and family members - they all thought them soooo funny, especially the chicken.

Hey there, Annalee! Yes, Santa was good to me this year. I got a whole brand new set of Farberware pots and pans. I haven't had a new set since I first got married 20 years ago! And a new spatula and some Farberware cookie pans! I am SO Thrilled!!!! I can't wait to use them. So Santa helped you with the computer and me with kitchen stuff. Since I'm the Kitchen queen in the house..this was very welcome.
