Ho Ho Ho Eggnog Cookies!!

I am pleasantly surprised by so many requests for my Eggnog cookies! Thanks everyone!!!


FYI -they are not overly sweet and I find them perfect with tea or coffee. **sheepish grin**
Yup, I snuck some for breakfast..I'm such a nut.

I decided to picture them for you with a little holiday touch .....



EGGNOG COOKIES

2 & 1/4 cups flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 & 1/4 cups granulated sugar
1 & 1/2 sticks (3/4 cup) salted butter, softened
1/2 cup Eggnog (I used Hood's brand, but you may have your own favorite)
1 teaspoon vanilla extract
2 large egg yolks
1 tablespoon ground nutmeg
(If nutmeg flavor too strong,((the fresher the nutmeg, the stronger it is..did you know that?)) you can always substitute with cinnamon/sugar mix like I do)

Preheat oven to 300 degrees

In a medium sized bowl, combine flour, baking powder, cinnamon, and 1/2 teaspoon nutmeg.
Mix well with a wire whisk and set aside.
In a large bowl, cream sugar and butter with an electric mixer to form a grainy paste.
Add eggnog, vanilla, and egg yolks and beat at medium speed until smooth.
Add the flour mixture and beat at low speed just until combined.
Don't overmix.
Drop by rounded teaspoons onto ungreased cookie sheets, 1 inch apart.
Sprinkle lightly with nutmeg (or cinnamon mix) .
Bake for 23- 25 minutes or until bottoms turn light brown.
Transfer to a cool, flat surface immediately with a spatula.

Makes 3 dozen.

I doubled the recipe so I got a little over 6 dozen.
Be careful when you double though, if you do.
I found some clumps of unmixed baking powder the mixer missed at the very bottom.
I'll tell ya...you really have a sourfaced pucker when that hits the sour sensors of the tongue..Yikes!!
Other than that...1/2 of what I baked is already eaten. That's why I have to double all my baked goods...I live with cookie monsters..LOL !!

P.S. I had to edit and add the "" & "" symbol because blogger wouldn't put in enough space in the 1 + directions. Looked confusing and jumbled to me. I wonder why it wouldn't keep the space???... No matter, as long as it makes sense in the end.
And I apologize to the people who use the Metric measurement system. I don't know the conversions, otherwise, I would have added them too for your baking convenience.

Thank you for posting the recipe. Can't wait to try it. I love to bake and do a ton of it, especially this time of year. I am always on the lookout for new and yummy recipes. This one looks like it fits the category. I will be starting the starter for frindship bread tonight. *crossing fingers*

Yummy... I found a cool recipe for eggnog scones on the back of... eggnog a few years back. I didn't save it and they don't carry that brand here. These sound great. I should try them!

Annalee, you lost what sounds like a great recipe??!! And they don't sell the brand anymore...*sigh* I'm always looking out for cool recipes that help make the Christmas season special. Maybe if you remembered the company name, I could Google it and surf a bit.
Oh, and THANKS for the compliment on my "decorations"..my youngest likes to wrestle with that very tree....I have NO idea why.. But he sure has adopted it this year..LOL.
